So in line with Nutrition 101, I think a lot of folks want to eat better but just are not really sure how to cook unless if it is out of a box. My personal problem is not a lack of how to cook but more an over abundance of recipes. See I like to cook and worse I like to read cookbooks. I don’t tend to really make specific recipes, unless it is baked goods, but instead by way of osmosis I take what sounds good and make up my own recipe. Now I offer up my humble dishes for you to try and improve on, this is not gourmet by any means but then how many of us are 5-star chefs? Exactly.
To get started, a good, cheap source of protein, fiber, and musical enjoyment, beans.
Basic Black Beans:
-2 cups Black Beans soaked overnight and drained (use enough water to cover the beans plus about 4-5 more inches of water)
-1 chopped onion
-LOTS of garlic, adjust to personal taste
-Basil, tyme and sage about 1tlbs each
-2 large cans diced tomatoes
-about 4 cups chicken or veggie broth
Cook onions in a bit of olive oil in a medium sauce pan or dutch oven . Add in garlic, cook until browned a bit then add other spices and tomatoes. Add in beans. Cover in broth until pot is about full with 2 inches room at the top. Bring to a boil then turn down heat and cover. Simmer gently for 1-4 hrs.
These are VERY done beans, shorten cooking time if you prefer firmer beans. Serve over rice or whole grains such as quinoa and millet (you cook them like rice). Easy to spice up more for a different flavor latter in the week you can add these to tacos, make a quick chili, or just heat ‘em up and add a dollop of sour cream.
